Matcha Ice Cubes

MATCHA COCONUT WATER ICE CUBES

YIELD: 4 CUPS WORTH OF ICE CUBES TOTAL TIME: OVERNIGHT FREEZE

INGREDIENTS:

  • 4 cups coconut water, divided 
  • 1 teaspoon matcha powder 
  • your favorite nut milk 


DIRECTIONS:

In a bowl, combine 2 cups coconut water with matcha powder.  Stir until matcha is dissolved.  Fill ice cube trays half full of the matcha mixture and freeze.  Once frozen, fill remaining half of the ice cube tray with coconut water.  Freeze.  Serve with your fav inut milk.

 Now in our second year, The Grow Your Own Festival will be even more “Hands on to Dig In” as we kick off the fabulous Fall Season in Las Vegas! Families, Students, Clark County Teachers, and Residents across the Vegas Valley will be getting their green thumb, learning how to grow their own fresh produce year-round.

Admission is FREE, and festivities include: A full day of gardening workshops led by a skilled team of urban farmers from our community; Gardening displays with revolutionary products; Fresh produce food demos and cooking tips from local Las Vegas chefs; Kids zone with activities and junior gardener workshops; Farmers market with produce products from local farms and student gardeners; Food court with vendors serving tasty healthy food; Live music and entertainment on the main stage; And dozens of community minded, green, gardening, craft, and sustainable vendors for our Vendor Village within an epicurean garden venue.

Homemade Maple Hemp Milk

 Homemade Maple Hemp Milk (Fast & Easy) 

Prep time 5 mins Total time 5 mins 

I make small batches of this maple hemp milk as it's very easy to make and tastes best within the first couple of days. If preferred, you can double the batch, refrigerate and optimally use within 3 days.


Serves: 2¼ cups


Ingredients

  • ½ cup shelled hemp seeds ( great recommend Bob's Red Mill Hulled Hemp Seed Hearts)
  • 2 cups water, divided
  • 2 tablespoons maple syrup Grade B or to taste
  • ½ teaspoon pure vanilla flavoring or extract (Simply Organic Pure Non-Alcoholic Vanilla)
  • Pinch sea salt

Instructions

  1. Place the hemp seeds in your blender with half of the water. Blend until relatively smooth and creamy, 1 to 2 minutes. You will still see some little bits of hemp seed, that's okay.
  2. Add the remaining water, maple syrup, vanilla, and salt and blend until relatively smooth and creamy.
  3. Strain the maple hemp milk through a nut milk bag or (my method) through a sieve lined with a few layers of cheesecloth. Squeeze to extract all of the creamy goodness.
  4. If chilling any leftovers, stir before serving - it will separate a bit.

Notes Hemp Seed Pulp: There shouldn't be much remaining after you strain the hemp milk as hemp seeds do blend up fairly easily, but any pulp from your cheesecloth or nut milk bag can be tossed into oatmeal or baked recipes (such as granola or muffins).

Ingredients

Produce

  • 1 Banana, Small
  • 1 tbsp Ginger, Fresh
  • 1 cup Pineapple, frozen
  • 1 cup Spinach

Dairy

  • 1/2 cup Non Dairy yogurt, Plain  

Frozen

  • 2 Ice cubes

Liquids

  • 1 cup Water


Blend All the ingredients

Her (now closed) Pura Vida restaurant was our first 100% vegan restaurant, and Mayra's cooking touched everyone's hearts and souls. Although she has not had a brick and mortar location for a couple of years now, she remains at the forefront of vegan cooking in Vegas by doing a wide variety of vegan events and continues to excite people's tastebuds, touch their hearts with her food, and champion compassionate choices when it comes to our diets and the well being of our individual temples, and the planet as a whole. Absolutely DELICIOUS food! Chef Mayra is our Rock Star vegan chef!
